A cross between a frittata and a pastry-less quiche, this tastes incredible and is a hit with children and adults alike. It’s packed with veg and is really easy to make. Eat warm for lunch or leave to cool and pack in your picnic basket as a nice change from yet another sandwich.
- 2 courgettes, grated
- Quarter of an onion (more if you like)
- 5 eggs, beaten
- 115ml flavourless oil (e.g. sunflower)
- 140g self-raising flour
- 75g cheddar cheese
