Description
Give these magical sugar mice a go, courtesy of one of York’s most spellbinding shops!
Ingredients
- 300g Icing sugar
- 1 egg white (size 3)
- 1 tsp lemon juice
- Red food colouring (for pink mice)
- Strawberry laces
- Chocolate sprinkles
- Flavourings (vanilla, strawberry) optional
Method
- Sieve the icing sugar into a large bowl using a fine sieve.
- Whisk the egg white until white and frothy.
- Stir the sieved icing sugar into the frothy egg white evenly. Add the lemon juice and give a final stir.
- Using your hands, bring the icing mixture together into a ball. Turn onto a work surface lightly dusted with icing sugar and knead until it’s pliable (if it becomes too dry you can add a little more lemon juice or if it becomes too damp add more icing sugar)
- Divide the mixture into two and add a few drops of red colouring to one half (to make it pink, not red!), kneading until it is evenly combined. Break off walnut sized pieces of icing dough and roll into a mouse shape (fat at the bottom, pointy at the nose)
- Pinch ears with your thumb and forefinger and shape Add chocolate sprinkles for eyes and noses and a piece of strawberry lace for a tail.
- Place them on the baking parchment on the baking tray and leave overnight to dry
