This is a quick and easy lunchtime recipe that our children love, and it's pretty filling too. Feel free to fry a couple of sliced spring onions or garlic first if you'd like some extra flavour (or even some sliced chilli if you're adventurous). These quantities are enough for our three kids, with a couple left over for the grown-ups.
- 75g plain flour
- 300g sweetcorn (we use frozen, but just de-frost it first)
- 1 egg, beaten
- 1 teaspoon baking powder
- 100g halloumi, cubed
- 120ml milk
- Pinch of salt
- Oil for frying
1. Put the flour into a large mixing bowl, then add all the remaining ingredients. Mix well until it becomes a smooth batter (use a whisk if necessary).
2. Heat a tablespoon or so of oil in a large frying pan over a medium heat. Add a couple of tablespoons per fritter and fry on both sides until golden brown (around 5 minutes in total per fritter). We fry three at a time in a large pan. Set cooked fritters aside on a plate and repeat until you've used all the mixture.
