We’re all big fans of Reese’s peanut butter cups, so we thought we’d have a go at making our own. This recipe is for mini cups, using the smallest cupcake size, because we thought they’d be quite rich (they are). You could always make them in bigger cases because, if we’re anything to go by, the only thing that happens is that you end up eating two or three of the little ones anyway! This recipe makes around 12 little cups.
- 20g light brown sugar
- 20g soft butter
- 70g icing sugar
- 70g smooth peanut butter
- 100g chocolate (we used half milk, half dark)
1. Using a food mixer, or by hand, mix together the peanut butter, butter, sugar and icing sugar. It will come together like breadcrumbs that will stick slightly if you pinch it.
2. Take a teaspoonful at a time and form it into a round disc that will cover the base of the cases. Repeat until you run out of mixture.
3. Melt the chocolate in the microwave according to its instructions. Once it has melted and is smooth, spoon a couple of spoonfuls into each of the cases. Add sprinkles if you like, then put into the fridge to set.
