Description
This lovely cake is a simple showstopper from one of our favourite family-friendly York venues, York Theatre Royal.
Ingredients
- 225g (12oz) self-raising flour
- 225g (12oz) sugar
- 225g (12oz) butter
- 4 eggs
- Zest and juice of 1 lemon
Method
- Pre-heat the oven to 140 degrees celsius.
- Mix the sugar and butter together into a light and fluffy texture.
- Add the eggs and the zest and juice of 1 lemon and mix until mixture is completely combined.
- Add the flour in gradually until combined and no lumps of flour remain in the mixture.
- Pour into a greased and lined 8” round tin/loaf tin and bake for 45 minutes, the cake will be golden brown on top.
- Place on a baking tray and leave to cool.
- Once thoroughly cooled, make icing to decorate with icing sugar and a drop of water and drizzle on top of the cake.
