Description
What better way to show someone you love them than with some delicious homemade biscuits? These jammy sweethearts will win anyone’s heart.
Ingredients
For the dough
- 150g plain flour
- 75g caster sugar
- 125g soft butter
- I egg yolk
- Pinch of sugar
- A few drops vanilla essence
For the filling
- Strawberry jam
- 50g icing sugar
- 30g butter
- A couple of drops of vanilla essence
Method
- By hand or electric mixer, cream/mix together the butter and sugar until light and fluffy.
- Add the egg yolk and beat into the creamed mixture
- Add the flour and salt and mix together until it becomes a dough
- Roll the dough into a ball and put it in the fridge for 30 minutes
- Pre-heat the oven to 180C
- Roll out the dough on a floured surface and cut into circles (around 6cm)
- Put them on baking trays (greased or lined) and allow enough space between each circle
- Cut out hearts from half of the biscuits (and why not bake the hearts too?!)
- Bake them in the oven for 10-12 minutes until slightly golden
- Allow to cool
- Make the icing by melting the butter in a pan and beating in the icing sugar and vanilla essence. Add a drop of water if necessary.
- Spread the icing on the whole circles, then spread the jam over the icing.
- Put the heart cookies on top and sprinkle over some sugar if you like.
