Description
Who doesn't love a Chocolate Orange? These cookies are absolutely delicious, really easy and dangerously moreish.
Ingredients
125g unsalted butter
100g caster sugar
100g light brown sugar
25g cocoa powder
225g plain flour
1 egg, beaten
1 tsp vanilla extract (optional)
Zest of an orange (and a squeeze or two of juice from the orange)
0.5 tsp bicarbonate of soda
0.5 tsp baking powder
Pinch of salt
1 Terry's Chocolate Orange, broken up into pieces
Method
- Preheat the oven to 190°C/170°C fan. Line 2–3 large baking trays with baking paper.
- In a large bowl, beat together the butter and sugars until well combined. We use an electric mixer for this, but you can use a wooden spoon and some elbow grease, too.
- Add the egg, vanilla extract, orange zest and a couple of squeezes of juice from the orange, then mix until smooth.
- Add the cocoa powder, plain flour, bicarbonate of soda, baking powder and salt, and mix to form a dough.
- Stir in the Chocolate Orange pieces.
- Spoon balls of the dough onto the trays, leaving plenty of room between them as they'll spread.
- Bake for 10–12 minutes, then remove from the oven.
- Leave the cookies to cool on the trays before transferring to a rack or container.
